Yummy Rice Pudding

Finely grated apple and mashed banana add the perfect level of sweetness for tiny palates. Serve this sweet treat warm, at room temperature or cold, depending on your baby’s preference. This recipe is a source of iron, which is a factor in red blood cell formation. Gradual introduction of iron-rich solid foods should be part of baby’s diet starting at six months of age. This recipe also provides calcium, which aids in the formation and maintenance of bones and teeth.

Ingredients:

1/2 cup (125 mL) uncooked white or brown rice
2 cups (500 mL) water
1 medium apple, peeled, cored and grated
1 mashed banana
1/4 cup (50 mL) fortified rice milk or cow’s milk
Pinch cinnamon (optional)

Directions:

  • Combine rice and water in a medium saucepan. Bring to a boil over medium high heat. Cover; reduce heat and cook until rice is tender and most of the liquid has been absorbed, about 20 minutes.
  • Stir in apple, banana and milk and cook 10 minutes. Sprinkle with cinnamon if desired.

Makes 4 servings.

Note: For younger babies process until smooth, adding more milk if necessary to achieve desired consistency.
