With beets and carrots at their peak sweetness, I love the look of this bread. Endorsed by Pulse Canada, Country Harvest Canadian Rustic Bean Bread is the first to be made with 100% Canadian pulses – a blend of chickpeas, beans, lentils and peas grown in Western Canada. It doesn’t taste “beany” – it tastes like the other grainy loaves they make, but with 6g protein (the equivalent of one XL egg), 3g of fibre (the equivalent of a small banana) and 22g whole grains in every serving, it makes me feel better about the sandwiches I send to school – and the grilled cheese I tend to sneak in at my desk.

I love the look of this sandwich, made with grated beets and carrots, sliced cucumber and herbed cream cheese – it’s the sort of thing I might order in a cafe, but not think to make at home. Now I will!

The Mega Veg Pulse Sandwich

2 Slices Country Harvest Canadian Rustic Bean Bread, lightly toasted
2 tbsp light herb and garlic cream cheese
4 slices cucumber
1 radish, thinly sliced
1/4 cup beet, grated
1/4 cup carrot, grated
1 tbsp baby onion sprouts
1 leaf boston lettuce

1. Assemble sandwich by dividing cream cheese and spreading onto each slice of bread.
2. Layer cucumber onto bread followed by radish, beet, carrot, sprouts and lettuce.
3. Top with remaining slice of bread.

Chef tip: for extra protein try adding grated hardboiled egg
