Weekend Breakfast
Fun foods the whole family will love!



2 slices turkey sausage, browned and chopped
(any favourite breakfast meat)
½ cup egg substitute
1/4 cup salsa
1/4 cup shredded cheddar cheese
2 whole wheat tortillas
Scramble eggs. Place one tortilla in warm,
non-stick frying pan. Spoon half the
scrambled egg in strip from left to right
on tortilla. Spread half the salsa over eggs.
Sprinkle with cheese and meat. Slide
tortilla onto cutting board. Fold 5 cm of
one side of shell toward middle and roll
tortilla over filling. Repeat and serve.




6 slices turkey or chicken bacon
cut into 1/2” pieces
1-1/2 cup Swiss cheese, diced or grated
9” partially baked pie shell
4 eggs, beaten
2 cups cream
1/2 tsp salt
1/4 tsp nutmeg
Pinch of pepper
Cook bacon until almost crisp. Remove it
from the pan and drain thoroughly. Preheat
oven to 450ºF. Bake the pie shell for just a
few minutes. Cover the bottom of the partially
baked pie shell with bacon and cheese.
Beat eggs and cream together with the salt,
nutmeg and pepper. Pour all into the pie shell.
Bake for 10 minutes at 450ºF, and then
15 minutes at 350ºF.
