Chopped Cobb Salad

Sometimes what turns kids off about a salad is the fact that everything is mixed together; a Cobb salad is arranged without being tossed. Crumbled blue cheese is traditional, but substitute any type of cheese your kids like. Drizzle with buttermilk, ranch or maple balsamic vinaigrette (next page), or any dressing of your choice.


INGREDIENTS:

1 small head Romaine, chopped
2 cups (500 ml) cooked chopped chicken
4–6 slices bacon, cooked until crisp and crumbled
2 tomatoes, chopped, or 1-2 cups cherry or grape tomatoes, halved
2 hard-boiled eggs, peeled and chopped
1/2 cup (125 ml) cheese , chopped, crumbled or grated
1 avocado, peeled and chopped
2 green onions, chopped (optional)


DIRECTIONS:

Arrange each ingredient on a platter. Line them up or come up with your own pattern. Drizzle with dressing just before serving.

Serves 4.


PER SERVING (undressed, made with grated cheddar cheese):

412 calories, 25 g fat (10.6 g saturated fat, 11.3 g monounsaturated fat, 3.2 g polyunsaturated fat), 6.5 g carbohydrates, 211 mg cholesterol, 34 g protein, 3.2 g fibre.
