Custom waffles - custom wafflesThe waffler can’t decide what she wants.
So make it easy on her. This basic waffle
batter can be dressed up according to
the cravings of the day. Stir anything from
fresh berries to crumbled bacon right into
the batter. Tight on time? Leftovers can be
cooled, wrapped and frozen, then reheated
in the toaster or microwave.

To go tip: Put a little maple syrup
in the batter so there’s no
need to pour it on and
use a knife and fork!

Ingredients:

2 cups (500 ml) all-purpose flour, or half
all-purpose, half whole wheat
2 tbsp (30 ml) sugar
2 tsp (10 ml) baking powder
1/4 tsp (1 ml) salt
1 1/2 cups (375 ml) milk
2 large eggs
1/4 cup (60 ml) vegetable oil or melted butter
1 tsp (5 ml) vanilla
1 cup (250 ml) fresh or frozen berries, or 1/2 cup
(125 mL) chopped nuts or cooked, crumbled
bacon

Directions:

In a medium bowl, whisk together the flour, sugar,
baking powder and salt. In a small bowl, whisk together
the milk, eggs, oil or butter and vanilla. Add to
the dry ingredients and whisk just until blended. Stir
in any additions you like.

Preheat waffle iron and spray it with nonstick spray or
brush it with oil. Ladle in about 1/2 cup batter, close
the lid and cook according to the manufacturer’s
directions, or until golden and crisp.

Serve immediately, or keep warm on a rack set on a
baking sheet in a 250˚F oven while you cook the rest.
Makes about 8 large waffles.
