A colourful fruit salad makes a welcome addition to any brunch table. Dress it with a fresh and simple honey-lime syrup for the occasion, along with a sprinkle of mint.

Fruit Salad with Mint, Honey and Lime

1/2 pineapple, peeled, cored and cubed
1/2 small watermelon, cubed
1 Sunkist orange peeled and cubed
1 cup (250 ml) strawberries, sliced
1 cup (250 ml) green grapes
1 cup (250 ml) red grapes
1/2–1 cup (125–250 ml) blueberries
3 tbsp (45 ml) lime juice
3 tbsp (45 ml) liquid honey
a handful of fresh mint

Combine all of the fruit in a large bowl or platter. In a small bowl, whisk together the lime juice and honey, warming it in the microwave or in a small saucepan on the stovetop to further liquefy the honey as needed.

Drizzle the honey-lime mixture over the fruit salad and gently toss to coat. Sprinkle with chopped or torn fresh mint before serving.

Serves 10.
