Gin and Tonic Popsicles with Lime and Mint

Grown-ups should have their own ice pops! These gin and tonic popsicles with lime and mint are actually a cross between a G&T and a mojito; feel free to use rum, gin, vodka or tequila (just don’t use too much, or they won’t freeze properly).

Ingredients for Gin and Tonic Popsicles

1/3 cup (85 ml) sugar
1/3 cup (85 ml) lime juice
1/4 cup (60 ml) gin, rum, vodka or tequila
1 cup (250 ml) soda water
a few mint leaves
1 lime, thinly sliced

Directions

In a small saucepan, bring the sugar and lime juice to a simmer over medium heat; stir until the sugar dissolves.

Remove from the heat and set aside to cool.

Pour into a small bowl or pourable measuring cup and add the gin and soda water.

Tear the mint leaves into the ice pop molds or paper cups; add the lime mixture to each gin and tonic popsicle, filling almost full.

Place a slice of lime on top, and poke the stick through the middle. Freeze until solid.

Makes 4–6 gin and tonic popsicles.
