1 lb fresh chicken, turkey or Italian sausages (2-3 large sausages)
canola or olive oil, for cooking
grated cheddar or other meltable cheese (optional)
1 dozen small slider buns or mini focaccia burger buns
1. Squeeze the sausage meat out of its casing at 1-inch intervals, making little balls. Flatten each ball of meat into a small patty.
2. Set a large, heavy skillet over medium-high heat and add a drizzle of oil. When the oil is hot, cook the sausage patties for a few minutes per side, just until cooked through.
3. Optional: add a small pile of grated cheese to the burgers for the last minute or so of cooking time, and put a lid on the pan if you have one to help trap the heat and melt the cheese.
4. Serve on small slider buns with your choice of condiments. Makes about 1 dozen sliders.
