Somewhere along the road to healthy eating these little nuggets got a bad reputation. But the fact is that, when part of a nutritious diet, potatoes are packed full of vitamins and minerals.
They contain vitamin C, which acts as an antioxidant, and can help with digestion, heart health, blood pressure and even cancer prevention. They also are full of potassium, excellent sources of soluble and insoluble fibre and rich in vitamin B6.
Plus, they can be ready in a flash, are great for leftovers and can be prepared in a variety of dishes.
