A frittata is like a quiche but without the crust. It can be filled with just about anything and is a great way to use leftover cooked veggies, roasted potatoes, meat or even pasta. Bits of cheese can be grated and tossed into the mix or add cubed stale bread and have yourself a strata.
2 slices turkey sausage, browned and chopped
(any favourite breakfast meat)
½ cup egg substitute
1/4 cup salsa
1/4 cup shredded cheddar cheese
2 whole wheat tortillas
1. Scramble eggs.
2. Place one tortilla in warm, non-stick frying pan.
3. Spoon half the scrambled egg in strip from left to right on tortilla.
4 thick slices white or French bread
1/2 cup spreadable cream cheese
2 tbsp strawberry jam
1/2 cup milk
1/2 tsp vanilla
2 tbsp butter or margarine
1 tsp icing sugar
1. Stir together cream cheese and jam until blended.
2. Spread mixture onto one slice of bread. Top with second slice.
