These non-traditional condiments really cut the mustard!
Honey Mustard
Stir together equal parts liquid honey or Rogers’ golden syrup and grainy mustard.
Mango Salsa
Finely chop a fresh mango, Roma tomato, jalapeño pepper and half a small purple onion; stir together in a bowl with a squeeze of lime and refrigerate until needed.
Guacamole
Peel and pit a ripe avocado or two; mash with one or two crushed garlic cloves, the juice of a lime, and salt to taste. If you like, add finely chopped purple onion, tomato or cilantro.
Tzatziki
Grate half a cucumber on the coarse side of a box grater onto a paper towel; gather it up and squeeze out as much liquid as possible. Stir the grated cucumber into two cups thick plain yogurt (preferably Greek-style). Stir in a crushed clove of garlic, squeeze of lemon and pinch of salt. Refrigerate overnight to allow the flavours to blend.
Apple Cider Braised Onions
Halve and thinly slice two sweet onions. Heat a drizzle of oil in a heavy skillet and cook the onions for five minutes, until soft. Add 1/3 cup apple cider or juice and continue to cook for another 10 minutes, until golden and caramelized.
