Ingredients

2 cups (500 ml) all-purpose flour
1/2 cup (125 ml) packed brown sugar
1 tbsp (15 ml) baking powder
1/4 tsp (1 ml) salt
1 cup (250 ml) grated aged cheddar
1 cup (250 ml) milk
1/4 cup (60 ml) canola oil
1 large egg
1 cup (250 ml) finely chopped or grated apple

Directions

Preheat the oven to 400F.

In a large bowl, stir together flour, sugar, baking powder and salt. Add the grated cheese and toss to combine.

In a small bowl, stir together milk, oil and egg. Add to the dry ingredients along with the apple and stir just until blended.

Divide the batter among paper-lined muffin cups in a muffin tin and bake for 20 to 25 min, until golden and springy to the touch. Makes 8 to 10 apple-cheddar muffins.
