Cucumber-Coconut Raita

INGREDIENTS:

1 cup cucumber, peeled and chopped
¼ cup finely shredded coconut
1/2 cup yogurt or sour cream
Paprika

DIRECTIONS:

Combine all ingredients in a bowl; mix well and top with sprinkling of paprika. Serve with veggies to dip.
