Fig Bars


1 1/2 cups dried figs
1 cup water
2 tbsps honey or molasses
4 1/2 cup all-purpose flour
3 tsp baking powder
3 cups brown sugar
4 1/2 cups oats (reserve 2 tbsp)
1/2 cup butter
8 oz. favourite jam


1. Combine figs, water and honey in a saucepan and bring to a boil.

2. Cover, reduce heat, and simmer 20 minutes or until softened.

3. Combine flour, baking powder, brown sugar, butter and oats (not jam) in food processor and mix.

4. Add fig mixture and process until smooth.

5. Preheat oven to 250ºF. Press half of mixture into greased 9” pan.

6. Spread jam in middle keeping jam from very edges.

7. Pack on rest of batter to form top layer.

8. Form top layer with remaining mixture.

9. Bake 1 hour.

10. Cool and cut into bars.

11. Roll in reserved oats.
