As easy to make as a grilled cheese sandwich, quesadillas make great vehicles for all sorts of leftovers. Try adding chopped roasted chicken, beef or pork, leftover cooked veggies, or crumbled sausages along with any kind of meltable grated cheese. They’re just as tasty cold – especially with salsa for scooping.

Ingredients

Flour tortillas
Grated cheddar or other meltable cheese
Chopped roasted chicken, beef or pork (optional)
Chopped fresh veggies, such as peppers or mushrooms (optional)
Chopped cooked veggies, such as broccoli or carrots (optional)

Directions

Sprinkle grated cheese and your choice of fillings over one side of a fl our tortilla; fold it in half to enclose the filling, and cook in a hot skillet until the cheese melts and the outside is toasted and golden.

Cool, cut into wedges and pack along with a small container of salsa.

Makes as many as you’d like.

Per Quesadilla (made with an 8-inch flour tortilla and 1 oz. cheddar):

260 calories, 11 g fat (6.3 g saturated fat, 4 g monounsaturated fat, 0.7 g polyunsaturated fat), 29 mg cholesterol, 25.6 g carbohydrate, 11.5 g protein, 0 g fibre.
