Green Curry Cod (or Haddock)

Stuck for fish ideas? At a recent cooking class at Loblaws, a leader in promoting MSC-certifi ed foods, we tried out this delicious recipe for Green Curry Cod, but substituted the much cheaper just as delicious haddock. Over brown rice, it makes for a balanced dish.

INGREDIENTS:

1 jar PC Thai Green Curry Cooking Sauce
4 carrots, thinly sliced
2 sweet red peppers, thinly sliced
2 green onions, cut in 1-inch lengths
4 portions (142 g each) MSC-certified fresh fish fillets

DIRECTIONS:

1. Place sauce in 10-inch (25 cm) frying pan. Bring to a boil for two minutes. Add carrots, red pepper and green onions to pan; cook over medium heat until tender-crisp, about four to five minutes.

2. Add fish, making sure it is covered by sauce and vegetables. Reduce heat to low, cover and cook five to seven minutes or until fish flakes easily when prodded with a fork.

3. Serve garnished with lime wedges and an additional sliced green onion, if desired.

Serves 4.
