2 mini cucumbers, julienned (keep aside)
3/4 C sliced Angel Sweet™ tomatoes, 1/4″ thick
3 large green olives, diced
1 Tbsp finely diced red onion
2 Tbsp diced Sweet Twister™ pepper
1 Tbsp loosely packed and thinly sliced fresh basil leaves
1 tsp chopped fresh thyme
1/8 tsp kosher salt
1/8 tsp ground black pepper
2 Tbsp extra virgin olive oil
1/2 Tbsp white wine vinegar
1/2 lime, juiced
2 C shredded leftover turkey or chicken meat, reheated
12 x 4″ tortillas
4 tsp mayonnaise
1/4 tsp chipotle in Adobo
Kosher salt to season
Combine and store all salsa ingredients except the cucumbers and set aside for 10 minutes.
In a separate bowl, combine mayonnaise and chipotle. Spread mayonnaise mix inside each tortilla.
Divide turkey meat among the tortillas, followed by julienned cucumber. Season cucumbers with a sprinkle of Kosher salt, top with salsa.
Tip: For optimal flavour, make the salsa the day before.
