Quick Stollen

This recipe makes two full-sized loaves, or divide it into smaller loaves and price them accordingly. All they need for packaging is a ribbon and a brown paper bag (or freezer bag) to send them home in.


2 1/2 cups (625 mL) all-purpose flour
2 cups (500 mL) whole wheat flour
1/4 cup (60 mL) brown sugar or honey
1 tbsp (15 mL) baking powder
1 tsp (5 mL) baking soda
1 tsp ( 5 mL) salt
2 cups (500 mL) buttermilk or plain yogurt, thinned with a little milk
2 tbsp (30 mL) canola oil or melted butter
1 large egg, slightly beaten
grated zest of an orange (optional)
1/2–1 cup (125–250 mL) dried fruit, chopped if needed
(raisins, currants, cranberries, cherries, apricots, figs, dates)
1/2 cup (125 mL) chopped candied citron (optional)
1/2 cup (125 mL) chopped walnuts or pecans (optional)
extra flour or oatmeal for rolling


Stollen, a traditional loaf filled with dried fruit and nuts, makes a great big-ticket bake sale item.

1. Preheat oven to 375°F.

2. In a large bowl, stir together the flours, brown sugar (if you’re using honey, add it to the wet ingredients), baking powder, baking soda and salt.

3. In a medium bowl, whisk together the buttermilk, oil, egg and orange zest (if using) and add all at once to the dry ingredients.

4. Stir until partially combined; then add the dried fruit, citron and nuts (if using) and stir until you have a soft ball of dough.

5. Turn out onto a floured surface. With floured hands, divide dough in two and shape each piece into a flat oval. On each loaf, fold over about a third of the dough lengthwise, as if you were starting to fold a letter.

6. Transfer to a baking sheet that has been lined with parchment or sprayed with nonstick spray and bake for 40–45 minutes, until golden and the loaves sound hollow when you tap them on the bottom.

Makes 2 loaves.

PER SLICE (10 slices per loaf):
