That’s what we figured. Add that eggs are also an affordable source of high-quality protein, and it’s no wonder that eggs are considered a staple in households around the world.
With this and the rising costs of groceries in mind, we set out to create a weekly meal plan built around eggs. We worked with our friends at Get Cracking to select tasty, easy egg-based recipes and complementary sides to help you feed your family without breaking the budget. Read on for seven days of five-star meals and snacks the whole family will love.
Breakfast
Lemon-Ricotta Hotcakes with Blueberry-Syrup
We know pancakes take an extra minute, but think about how happy the kids will be to sit down to a stack of flapjacks on a standard Monday morning. These lemon-ricotta beauties are the lightest, fluffiest hotcakes you’ve ever seen. (TIP: Make the batter and blueberry syrup on Sunday night so it’s ready to go Monday morning.)

Leek, Bacon and Cheese Mini Frittatas

Perfectly scrambled eggs mixed with chunks of ripe avocado are piled high on sourdough toast for this one. A drizzle of chili oil adds a little heat.

Imagine how lucky your kiddos will feel opening up a Thermos of fried rice! Be sure to save some for your own midday nosh, too. (TIP: If your child’s school has a seafood allergy warning, just skip the shrimp!)

Quiche is a great option for any meal, any day of the week. You can even make this iconic version in advance and freeze it, for the easiest weeknight dinner ever. Serve with chopped Greek salad for a hit of fresh veg.

Chilaquiles (Breakfast Nachos)
Yes, we are suggesting that you serve your kids nachos for breakfast. Yes, they will think you’re the best parent ever. Best part? They’re ready in 15 minutes or less! (TIP: Make this recipe with hashbrowns instead of tortilla chips for a more breakfast-y feel!) Serve with fruit salad.
Lunch
Part pancake. Part pizza. Served with a container of marinara sauce for dipping, this recipe is sure to become a lunchbox fave.
Dinner
This one-skillet baked egg dinner looks so sophisticated (and maybe even a little complicated) but it comes together with in no time, with minimal effort and next to no dishes. Gluten-free flatbread is the perfect side.
