1 box Barilla PLUS® Penne
1 small red onion, julienned
4 tablespoons (50ml) extra virgin olive oil
1 bunch kale, centre stalks removed and leaves sliced thin
6 cup (50ml) white wine, dry
8 ounces (224g) container domestic mushrooms
6 cup (75g) parmigiano reggiano cheese, shredded
season to taste
BRING a large pot of water to a boil. COOK onion gently with olive oil in a large skillet over medium heat for 1-2 minutes. ADD kale; cook for 2-3 minute. ADD wine; reduce well, about 4 minutes.
ADD mushrooms; sauté for an additional 3-4 minutes. SEASON to taste. COOK pasta according to package directions; drain pasta and toss it with kale mixture. TOP with parmigiano reggiano cheese before serving.
