Rush Hour Meals Book Review - Parents Canada

Rose Reisman is masterful at creating recipes that seamlessly fit into busy lifestyles. Her creative recipe modifications that cater to fussy palates and dietary restrictions make cooking from this book a breeze. It is full of solid family-friendly, nutritionally balanced dishes that come together quickly and appeal to even the pickiest of palates.

The minestrone (page 64) includes a kid-friendly suggestion to use baby kale or spinach as those options are softer and sweeter than regular kale. In her Butternut Squash Shepherd’s Pie (page 152) she notes you can easily sub in sweet potatoes for the squash to create a slightly sweeter topping that might be more enjoyed by kids.
