Rush hour meals book - book review: rush hour mealsRose Reisman is masterful at creating recipes that seamlessly fit into busy lifestyles. Her creative recipe modifications that cater to fussy palates and dietary restrictions make cooking from this book a breeze. It is full of solid family-friendly, nutritionally balanced dishes that come together quickly and appeal to even the pickiest of palates.

The minestrone (page 64) includes a kid-friendly suggestion to use baby kale or spinach as those options are softer and sweeter than regular kale.
