Kale with bacon

Recipe submitted by Hanna Janzen.

Ingredients:

1 large bunch kale, chopped and tough stems removed
half a package (about 250 g) bacon, chopped
1 onion, chopped
2/3 cup sour cream (not fat free)

Directions:

1. In large saucepan, fry bacon to desired crispness. Drain off all but 1 tbsp of fat. Add onion to pan and cook, stirring, until softened. Add kale and 1/3 cup water, scraping brown bits from bottom of pan. Cover and cook until wilted. Stir in sour cream.

2. Serve as a meal, with crusty bread to mop up any extra sauce.
