Homemade Ice Cream Sandwiches

In summer, an ice cream sandwich is one of my favourite treats – with the possibility of any type of homemade cookie filled with my favourite ice cream, the potential combinations are endless. I love a good, chewy chocolate chip cookie – and with a second bookended with some vanilla ice cream, it’s about as good as it gets.
