Granola has become a popular go-to snack, but if you’re trying to cut down on sugar or are looking for something less crunchy, similar ingredients can be simply stirred together to make a hearty muesli – perfect for noshing on straight from the fridge between meals, and ideal for young kids. Mixed with yogurt and grated apple, the grains soften and the dried fruit plumps overnight, so it’s ready to go when you are.
Muesli
Play around with raw or toasted grains, fresh and dried fruits, nuts, seeds and yogurt. For individual servings, divvy the ingredients into jars to stash in the fridge and grab to go. To fancy it up, serve your muesli drizzled with honey or maple syrup and topped with fresh berries.
(Note: honey is not recommended for children under one year old.)
1 cup (250 ml) old-fashioned (large flake) oats or barley flakes
1 cup (250 ml) plain yogurt
1/4 cup (60 ml) chopped dried fruit (such as raisins, cranberries, dates, figs, apricots)
1/4 cup (60 ml) chopped nuts and/or seeds
1 apple, coarsely grated
1-2 tbsp honey or maple syrup (optional – to taste)
fresh berries, for serving (optional)
Stir everything together in a bowl, cover and refrigerate overnight.
Serves 4.
