No-Bake Peanut Butter Chocolate Chip Cookie Balls

1 cup quick oats
2/3 cup unsweetened coconut (shredded or flakes)
1/2 cup peanut butter
1/2 cup ground flax
1/2 cup mini semi-sweet chocolate chips
1/3 cup honey or maple syrup
1 tsp vanilla


Combine ingredients in a large mixing bowl and stir until just combined. Roll out tablespoon-size balls and stash in freezer.


Keep balls in the freezer to ensure firmness, eat them as-is (they’re still quite soft) or let them come to room temp before serving.
