Quiche Lorraine

6 slices turkey or chicken bacon, cut into 1/2” pieces
1-1/2 cup Swiss cheese, diced or grated
9” partially baked pie shell
4 eggs, beaten
2 cups cream
1/2 tsp salt
1/4 tsp nutmeg
Pinch of pepper


Cook bacon until almost crisp. Remove it from the pan and drain thoroughly.

Preheat oven to 450ºF.

Bake the pie shell for just a few minutes. Cover the bottom of the partially baked pie shell with bacon and cheese.

Beat eggs and cream together with the salt, nutmeg and pepper. Pour all into the pie shell.

Bake for 10 minutes at 450ºF, and then 15 minutes at 350ºF.
