Digestive cookie s’mores

There’s no need to wait until summer camping season for a gooey s’more – you can use your oven in place of an open fire, and you can streamline the process with chocolate-covered digestive cookies, rather then graham crackers and squares of chocolate.

Ingredients:

Chocolate-covered digestive cookies
1 jar Marshmallow Fluff

Directions:

1. Place digestive cookies chocolate side up on a rimmed baking sheet, and spread each generously with Marshmallow Fluff.

2. Place under the broiler for 2-3 minutes, until puffed and golden. Remove from the oven and immediately place a second cookie, chocolate-side-down, on top of the broiled marshmallow, pushing down to help it adhere, and so that some of the goo squishes out of the sides.

3. Serve warm, or allow to cool. Makes as many as you want to.
