Parmesan vinaigrette

There’s just nothing more boring to the taste buds than bland veggies. This quick vinaigrette will spruce up the flavour of the ‘green stuff’ we all want our kids to eat more of – they’ll be asking for seconds.
Serves 4
2-3 cups (500-750 mL) M&M Vegetable Blend of choice
1 garlic clove, minced
2 tsp (10 mL) white wine vinegar
1/2 tsp (2.5 mL) Dijon mustard
1/4 tsp (1.25 mL) salt
1/4 tsp (1.25 mL) dried basil
1/4 tsp (1.25 mL) dried oregano
1/4 cup (60 mL) olive oil
2 tbsp (30 mL) grated parmesan
Freshly ground pepper to taste
1. Microwave vegetables according to package directions.
2. In the meantime, whisk vinegar, mustard, garlic, salt and spices to combine. Add olive oil in slow stream, whisking to combine. Add parmesan and pepper, whisk to blend.
3. Drain cooked vegetables well. Add vinaigrette and toss to coat.
This vinaigrette would work well with M&M Bean and Carrot Medley, M&M Farm Fresh Blend, California Style Mixed Vegetables, Mixed Vegetables, Vegetable Supreme, Pasta and Vegetable Salad and Peaches & Cream Corn. It would also serve as a tasty and quick sauce for the M&M Haddock Fillets, Cod Fillets and Wild Chum Salmon Fillet.
Vinaigrettes are easy – instead of measuring everything out, just eyeball quantities; or, if that makes you uncomfortable, measure the ingredients the first time you make the vinaigrette to get a sense of proportion, and eyeball after that.
